  • 1/4 cup unsweetened cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (180°C). Grease an 8x8 inch square baking pan and line it with parchment paper.
  2. In a large bowl, whisk together the almond flour, coconut sugar, salt, and vanilla extract until combined. Add in the almond milk and mix well to form a smooth batter.
  3. Pour the batter into your prepared pan and spread it evenly with a spatula. Bake for 18 20 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely, then cut it into equal rectangles.
  4. In a high speed blender, blend cashews, coconut cream, maple syrup, and vanilla extract until smooth and creamy.
  5. Remove the thick layer of solid coconut cream from the canned coconut milk and discard the liquid part. Whip the solid coconut cream with the blended cashew mixture in a large bowl until fluffy.
  6. To assemble, dip each sponge rectangle into the cooled coffee, then place it on a serving plate. Top with a generous layer of the cashew coconut mousse. Repeat this process to create a sandwich effect and finish with a final rectangle of sponge.
  7. Chill your assembled dessert for at least 3 hours or overnight to set. Before serving, dust the top with cocoa powder through a fine sieve.
