  3. Stir in the Cajun seasoning, smoked paprika, salt, and pepper, cooking for another minute to release the flavors.
  4. Add the diced tomatoes and continue to cook until they have slightly softened, around 3 4 minutes.
  5. If using shrimp, add them to the skillet and cook until pink and cooked through, about 2 3 minutes. For a vegetarian option, add the tempeh cubes at this step and sauté for 4 5 minutes.
  6. Make two small wells in the vegetable mixture and carefully crack an egg into each well. Cover the skillet with a lid and cook until the whites are set and the yolks reach your desired level of doneness, about 3 5 minutes.
