3 large Granny Smith apples, peeled, cored, and thinly sliced
1 cup all
purpose flour
3/4 cup granulated sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 cup cold unsalted butter, cubed
1/2 cup rolled oats
1/2 cup sliced almonds
1/3 cup brown sugar, packed

Instructions
Preheat your oven to 375°F (190°C). In a large bowl, combine the apple slices with 1/4 cup of granulated sugar, 1/2 teaspoon of ground cinnamon, and 1/8 teaspoon of ground nutmeg. Toss until evenly coated and set aside.
In another bowl, mix together the flour, remaining 1/2 cup granulated sugar, 1/4 teaspoon ground cinnamon, and 1/8 teaspoon ground nutmeg. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until it forms a coarse meal.
Stir in the rolled oats, sliced almonds, and brown sugar. Mix until well combined, then sprinkle the mixture over the prepared pie crust.
Arrange the cinnamon spiced apple slices on top of the almond crumble layer, arranging them in a concentric pattern. Drizzle the vanilla extract evenly over the apples.
Bake the pie for 30 to 35 minutes, or until the top crust is golden brown and the apples are tender when pierced with a fork. If the edges of the crust begin to brown too quickly, cover them with aluminum foil.
Remove from the oven and let it cool on a wire rack for at least 1 hour before serving.
