4 large eggs
1 cup heavy cream
Salt and ground black pepper, to taste
1/2 teaspoon ground nutmeg
1/3 cup crumbled feta cheese
1 cup fresh spinach, chopped
1/4 cup chopped onion
1 tablespoon unsalted butter
1/2 cup shredded Gruyère cheese
Instructions
Preheat the oven to 375°F (190°C). Roll out the pie crust and place it in a 9 inch pie dish, pressing gently to form an even edge.
In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined. Stir in the feta cheese and set aside.
Heat a small pan over medium heat. Melt the butter, add the chopped onion, and cook until translucent. Add the fresh spinach and cook for another 1 2 minutes until wilted. Remove from heat and let cool.
Combine the cooked onion and spinach with the egg mixture and stir well. Pour this mixture into the pie crust, evenly distributing the ingredients.
