Instructions

Whisk until smooth, adding water as needed to achieve the desired consistency. Set aside. Next, fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds, then transfer it to a clean work surface. Allow the rice paper to soften slightly. To assemble each roll, place a small handful of bean sprouts in the center of the rice paper. Top with cucumber, bell peppers, carrot, lettuce leaves, basil leaves, and a small portion of cooked vermicelli. Sprinkle with roasted peanuts. Gently fold the bottom edge of the rice paper over the filling, then tightly roll the wrapper towards you, tucking in the sides as you go.
