Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup cucumber, diced
  • 1/2 cup citrus fruits (orange, grapefruit, and lemon), segmented
  • 2 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice
  • Salt and pepper, to taste

Instructions

  1. Rinse the quinoa under cold water until the water runs clear. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and fluffy. Set aside to cool.
  2. In a large bowl, combine the cherry tomatoes, red onion, parsley, cucumber, and citrus fruits. Add the cooled quinoa and toss well to combine.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to taste. Pour the dressing over the salad and mix thoroughly.
