Ingredients

  • 1. 4 oz wild
  • caught salmon fillet 2. 1 sheet sushi nori 3. 1/2 medium ripe avocado, sliced 4. 1 cup mixed baby greens 5. 1/4 cup cherry tomatoes, halved 6. 1/2 lemon, zested and juiced 7. 1/4 cup extra
  • virgin olive oil 8. 1 tbsp apple cider vinegar 9. 1 tsp Dijon mustard 10. Salt and pepper, to taste 11. 1 tbsp chopped fresh dill

Instructions

  1. Season the salmon fillet with salt and pepper to taste. In a non stick pan over medium heat, cook the salmon for about 3 minutes per side or until it reaches your desired doneness. Set aside to cool slightly.
  2. In a small bowl, whisk together lemon zest, lemon juice, olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing. Stir in the chopped dill.
  3. Place the nori sheet on a cutting board or clean surface. Lay out the mixed baby greens evenly over the nori, leaving about an inch at the top for sealing the wrap.
  4. Arrange cherry tomatoes and avocado slices on top of the greens. Place the cooked salmon on one half of the nori sheet.
  5. Drizzle the lemon dressing generously over the salmon and ingredients. Carefully roll up the nori sheet into a tight wrap, using a little water to help seal it. Slice the wrap in half on a diagonal.
