  • 1 cup cooked quinoa 2 ripe avocados 1/2 cucumber 1 carrot 2 sheets of nori 1 tbsp rice vinegar 1 tsp sugar 1 tsp salt

Instructions

  1. In a small bowl, mix the rice vinegar, sugar, and salt to create the sushi seasoning. Set aside.
  2. Lay out one sheet of nori on a bamboo sushi mat.
  3. Spread half of the cooked quinoa evenly over the nori, leaving a 1 inch border at the top edge. Sprinkle with 1/2 tbsp of the prepared seasoning.
  4. Peel the cucumber and carrot using a vegetable peeler, then julienne them into thin strips.
  5. Arrange the cucumber and carrot strips horizontally on top of the quinoa, leaving a 1 inch border at the bottom edge.
  6. Use the bamboo mat to roll up the sushi tightly, pressing gently to secure everything in place. Wet the top edge of the nori before rolling to prevent it from unraveling.
  7. Slice the sushi roll into 8 equal pieces using a sharp knife. Repeat with the remaining ingredients.
