  • 1 cup cauliflower rice
  • 6 oz thinly sliced beef sirloin
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp brown sugar
  • 2 cloves garlic, minced

  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup edamame
  • 1 green onion, thinly sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a small bowl, combine soy sauce, mirin, brown sugar, garlic, and sesame oil. Mix well and set aside as the marinade for the beef sirloin.
  2. Heat a non stick skillet over medium heat. Add cauliflower rice and cook until slightly softened, about 3 4 minutes. Set aside.
  3. In another non stick skillet, cook the marinated beef slices over medium heat for 4 5 minutes or until cooked to your desired level of doneness. Remove from skillet and set aside.
  4. Assemble the bowl by adding cauliflower rice, cooked beef, carrots, cucumber, edamame, and green onions. Top with sesame seeds and enjoy!
