In a large skillet, heat sesame oil over medium high heat. Add garlic and ginger, and cook for 1 minute until fragrant.
Add sliced beef and season with salt and pepper. Cook for 3 4 minutes or until browned and cooked through. Remove from skillet and set aside.
In the same skillet, add shiitake mushrooms, cooking for 2 3 minutes until softened.
Add carrots, zucchini ribbons, red bell pepper, and cucumber, cooking for an additional 3 minutes or until vegetables are tender crisp. Season with salt and pepper to taste.
Return the cooked beef to the skillet and mix well.
To assemble the bowls, divide spinach and edamame among four serving bowls. Top each with the beef mixture and sprinkle sesame seeds on top.
