Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until all water is absorbed. Remove from heat and let stand for 5 minutes before fluffing with a fork.
  2. In a large bowl, toss together zucchini, cucumber, cherry tomatoes, avocado, and olives.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Divide quinoa among 4 bowls and top with the vegetable mixture. Drizzle with the dressing and garnish with fresh basil leaves.
