Ingredients

  • 4 (6 oz) salmon fillets
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 8 cups mixed greens
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, sliced
  • 3 radishes, thinly sliced
  • 1 avocado, pitted and peeled
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 2 tbsp extra virgin olive oil
  • Fresh parsley, chopped, for garnish

Instructions

    Season salmon fillets with salt and pepper. Heat olive oil in a nonstick skillet over medium heat. Sear salmon fillets for 4 minutes per side or until cooked through. Remove from pan and let rest.
