  • 1 cup cooked quinoa
  • 1/2 cup sun
  • dried tomatoes
  • 1/2 cup cashews, soaked for 1 hour
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup nutritional yeast
  • 1 tablespoon lime juice
  • 1 tablespoon tamari or soy sauce
  • 2 teaspoons fresh ginger, minced
  • 2 cloves garlic
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine sun dried tomatoes, cashews, basil leaves, cilantro leaves, nutritional yeast, lime juice, tamari or soy sauce, ginger, garlic, salt, and pepper. Blend until well combined and the mixture forms a sticky dough.
  2. Transfer the mixture to a bowl with the cooked quinoa and mix until fully incorporated.
  3. Cover and refrigerate for at least 1 hour, or until firm enough to handle.
  4. Roll the mixture into bite sized balls and place them on a parchment lined baking sheet.
  5. Freeze the energy bites for 30 minutes to firm up.
