  • 1. Rice paper wrappers (10 count) 2. Large lettuce leaves (4) 3. Fresh shrimp (8 pieces) 4. Red leaf lettuce (1 head) 5. Carrots (2 medium, julienned) 6. Cucumber (1 large, julienned) 7. Red bell pepper (1, julienned) 8. Mango (1 ripe, sliced into strips) 9. Fresh cilantro leaves 10. Fresh basil leaves

Instructions

  1. Prepare all vegetables by washing and cutting them into long thin strips or julienne cuts. Set aside.
  2. Fill a shallow dish with warm water. Dip each rice paper wrapper one at a time into the water for a few seconds until softened, then transfer to a clean work surface.
  3. Place a lettuce leaf in the center of the softened rice paper.
  4. Arrange shrimp, carrots, cucumber, red bell pepper, mango, cilantro, and basil leaves on top of the lettuce leaf.
  5. Carefully roll the rice paper over the filling, tuck in the sides, and continue rolling until a tight seal is achieved. Repeat for remaining rolls.
