  • 1 cup frozen mixed berries 1 medium ripe banana 1/2 cup unsweetened almond milk 1 tablespoon chia seeds 1 teaspoon ground cinnamon 1 tablespoon honey or maple syrup (optional) 1 package firm tofu 1 tablespoon coconut oil 1/2 cup diced bell pepper 1/4 cup diced green onions 1/4 cup chopped cilantro 1/2 teaspoon salt 1/2 teaspoon turmeric 1/4 teaspoon black pepper

Instructions

  1. a. In a blender, combine the frozen mixed berries, ripe banana, unsweetened almond milk, chia seeds, ground cinnamon, and honey or maple syrup if using. Blend until smooth and creamy. b. Pour the smoothie mixture into a bowl and set aside. c. Drain the tofu and crumble it into small pieces. d. Heat coconut oil in a skillet over medium heat. Add the crumbled tofu, bell pepper, green onions, cilantro, salt, turmeric, and black pepper. Sauté until the vegetables are tender and the tofu is heated through, about 5 7 minutes. e. Spoon the tofu scramble over the smoothie bowl and enjoy your energizing Vietnamese breakfast.
