  • 4 large lettuce leaves (Boston or butter lettuce)
  • 2 ripe avocados, sliced

  • 1 red bell pepper, thinly sliced

Instructions

  1. In a medium bowl, combine the chicken breasts with all of the marinade ingredients. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more pronounced flavor.
  2. Preheat your grill or grill pan over medium high heat. Grill the marinated chicken until cooked through, about 5 6 minutes per side. Remove from heat and let rest for a few minutes before slicing into thin strips.
  3. Assemble the lettuce wraps by placing a slice of chicken in the center of each lettuce leaf. Top with avocado, cucumber, red bell pepper, and herbs. Sprinkle with chopped peanuts, if using.
