1 lb ground chicken 4 oz shiitake mushrooms, thinly sliced 2 cloves garlic, minced 1 tbsp fresh ginger, grated 1/2 cup cilantro, chopped 1/4 cup mint leaves, chopped 1 lime, juiced 3 tbsp olive oil 8 large lettuce leaves, for serving Salt and pepper, to taste

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the garlic and ginger, sautéing until fragrant, about 1 minute.
Add the ground chicken to the skillet and cook until browned and cooked through, breaking up any large pieces with a wooden spoon. Season with salt and pepper.
