  • 4 oz cooked rice vermicelli 6 oz grilled chicken breast, sliced 1/2 cup fresh mint leaves 1/2 cup fresh cilantro leaves 1/2 cup basil leaves 1/4 cup roasted peanuts, chopped 1/4 cup pickled carrots and daikon radish 1/4 cup edamame, shelled Citrus Ginger Dressing: 3 tbsp fresh lime juice 2 tbsp rice vinegar 1 tbsp honey 1 tsp grated ginger 1 tsp minced garlic Salt and pepper, to taste

Instructions

  1. Cook the rice vermicelli according to package instructions. Drain and rinse under cold water.
  2. Prepare the citrus ginger dressing by whisking together lime juice, rice vinegar, honey, grated ginger, minced garlic, salt, and pepper in a small bowl. Set aside.
  3. In a large bowl, combine the cooked vermicelli, sliced chicken, mint leaves, cilantro leaves, basil leaves, chopped peanuts, and pickled carrots and daikon radish. Toss gently to combine.
  4. Drizzle the citrus ginger dressing over the salad and toss again to coat evenly.
  5. Divide the herbal chicken rice bowl between two serving bowls and top with edamame.
