  • 4 cups chicken or vegetable broth, warmed

Instructions

  1. Soak the rice noodles in hot water for 5 minutes or according to package instructions until softened but not fully cooked. Drain and set aside.
  2. In a large pot, bring the chicken or vegetable broth to a boil.
  3. Add the shrimp to the boiling broth and cook for 2 3 minutes or until pink and fully cooked. Remove shrimp with a slotted spoon and set aside.
  4. In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, grated ginger, and red pepper flakes (if using). Set aside as the "seafood seasoning."
  5. To serve, divide the softened rice noodles into two bowls, followed by the cooked shrimp, bean sprouts, and green onions. Pour the warmed broth over the ingredients in each bowl.
  6. Drizzle the seafood seasoning over the dishes, garnishing with crushed roasted peanuts and cilantro leaves.
