Ingredients
- 12 large shrimp, peeled and deveined
- 8 rice paper wrappers (banh trang)
- 1 cup bean sprouts
- 1 cup lettuce, torn into bite-sized pieces
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1/2 cup fresh basil leaves
- 1/2 cup fresh mint leaves
- 1/4 cup roasted peanuts, roughly chopped

Prepare the shrimp by seasoning them with a pinch of salt and black pepper. Set aside.

Fill a large bowl with warm water. Soak the rice paper wrappers one at a time for about 10-15 seconds until softened.

Lay a soaked rice paper wrapper onto a clean surface. Place a few lettuce leaves, bean sprouts, cucumber slices, carrot, basil leaves, and mint leaves on the lower third of the wrapper.

Top with 2-3 shrimp and a sprinkle of roasted peanuts.

Carefully roll up the summer roll, tucking in the sides as you go. Repeat for all wrappers and ingredients.
