Ingredients

  • 12 large shrimp, peeled and deveined
  • 8 rice paper wrappers (banh trang)
  • 1 cup bean sprouts
  • 1 cup lettuce, torn into bite
  • sized pieces
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh mint leaves
  • 1/4 cup roasted peanuts, roughly chopped

Instructions

  1. Prepare the shrimp by seasoning them with a pinch of salt and black pepper. Set aside.
  2. Fill a large bowl with warm water. Soak the rice paper wrappers one at a time for about 10 15 seconds until softened.
  3. Lay a soaked rice paper wrapper onto a clean surface. Place a few lettuce leaves, bean sprouts, cucumber slices, carrot, basil leaves, and mint leaves on the lower third of the wrapper.
  4. Top with 2 3 shrimp and a sprinkle of roasted peanuts.
  5. Carefully roll up the summer roll, tucking in the sides as you go. Repeat for all wrappers and ingredients.
  6. Slice each roll into half or thirds and serve immediately.
