Ingredients

  • 8 rice paper wrappers
  • 12 large shrimp, peeled and deveined
  • 1 cup bean sprouts
  • 1 small cucumber, thinly sliced
  • 1 small carrot, julienned
  • 1 small red bell pepper, thinly sliced
  • 8 leaves romaine lettuce, washed
  • Fresh cilantro and mint leaves

Instructions

  1. Preheat a grill or grill pan to medium high heat. Season the shrimp with salt and pepper, and grill for 2 3 minutes per side until pink and cooked through. Remove from the grill and let cool.
  2. Fill a large bowl with warm water. Dip each rice paper wrapper in the water for about 10 seconds or until softened. Transfer to a clean surface.
  3. Place a shrimp at the center of the wrapper, followed by a few bean sprouts, cucumber slices, carrot juliennes, red bell pepper slices, and a few romaine lettuce leaves. Top with fresh cilantro and mint leaves.
  4. Carefully roll up the summer roll like a burrito, tucking in the sides as you go. Repeat until all ingredients are used.
