Instructions

  2. Preheat oven to 400°F (200°C). In a large bowl, toss bell peppers, zucchini, squash, and onion with olive oil, salt, and black pepper. Spread the vegetables on a baking sheet and roast for 25 30 minutes or until tender.
  3. In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and black pepper to create the dressing.
  4. To assemble the bowls, divide quinoa among four serving bowls. Top each with roasted vegetables, feta cheese, avocado slices, pomegranate seeds, parsley, and mint. Drizzle lemon dressing over the top.
