Ingredients
- 1/2 cup quinoa, rinsed and drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
Instructions
- In a medium saucepan, bring 1 cup of water to a boil. Add the quinoa and cook according to package instructions, about 15 minutes or until cooked and fluffy.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and basil.
- When the quinoa is cooked, drain any excess water and let it cool for 5 minutes.
- Add the cooled quinoa to the bowl with the other ingredients and toss gently.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to taste. Pour over the quinoa mixture and toss again to combine.
