1 leek, white and light green parts, thinly sliced
1 cup cherry tomatoes, halved
1 cup shelling peas, fresh or frozen
1 cup asparagus, trimmed and chopped
Salt and pepper, to taste
Zest and juice of one lemon
2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1/4 cup pine nuts, toasted
Instructions
In a medium saucepan, combine the farro and water or vegetable broth. Bring to a boil, then reduce heat and simmer until farro is tender but still slightly chewy, about 20 25 minutes. Drain any excess liquid and set aside.
In a large skillet, heat olive oil over medium heat. Add leek and cook until softened, about 4 5 minutes.
Add cherry tomatoes, peas, and asparagus to the skillet with the leek. Cook for an additional 6 7 minutes, or until vegetables are tender but still crisp. Season with salt and pepper, to taste.
In a small bowl, combine lemon zest, lemon juice, dill, parsley, and pine nuts. Mix well and season with salt and pepper, if needed.
To serve, divide farro among 4 plates. Top each plate with the vegetable mixture and drizzle with the lemon herb sauce. Enjoy!
