Ingredients

  • 8 rice paper wrappers 10 large shrimp, peeled and deveined 2 cups mixed greens (romaine, iceberg lettuce, and spinach) 1 small cucumber, thinly sliced 1 small carrot, julienned 1 red bell pepper, thinly sliced 10 mint leaves 10 basil leaves 1 avocado, thinly sliced 1 tablespoon sesame seeds Salt and pepper, to taste

Instructions

  1. Heat a grill or grill pan over medium heat. Season shrimp with salt and pepper. Cook for 2 3 minutes per side until pink and opaque. Remove from heat and let cool.
  2. Fill a large bowl with warm water. Soak rice paper wrappers one at a time for about 10 seconds until softened. Transfer to a clean kitchen towel or plate.
  3. Assemble rolls: Place a softened wrapper on a clean surface. Add shrimp, mixed greens, cucumber, carrot, red bell pepper, mint leaves, and basil leaves in the center of the wrapper. Top with avocado slices and sprinkle sesame seeds over the top.
  4. Fold in sides of the wrapper and roll tightly to enclose filling. Repeat with remaining ingredients.
  5. Cut rolls in half and serve immediately.
