  • 24 rice paper wraps (8.5 inches) 1 cup cooked shrimp, peeled and deveined 1 avocado, sliced 1 cup mixed leafy greens 1 large cucumber, julienned 1 red bell pepper, thinly sliced 1/2 cup fresh basil leaves 1/2 cup fresh mint leaves 1/2 cup fresh cilantro leaves

Instructions

  1. Fill a wide, shallow dish with warm water.
  2. Dip one rice paper wrapper into the water, fully submerging it for 5 10 seconds or until softened.
  3. Transfer the rice paper to a clean damp cloth and gently pat dry.
  4. Place the wet rice paper on a clean surface.
  5. Arrange shrimp, avocado, leafy greens, cucumber, red bell pepper, basil, mint, and cilantro in a row along the center of the rice paper.
  6. Fold the bottom half of the rice paper over the ingredients, then fold in both sides and roll tightly into a cylinder.
  7. Slice each roll into 2 3 pieces and repeat until all ingredients are used.
