“Zesty German Paleo Chicken Skewers with Cranberry-Almond Sauce”

For the Chicken Skewers: 1 lb chicken breasts, cut into bite
sized pieces 2 lemons, zested and juiced 4 cloves garlic, minced 1/4 cup olive oil 2 tbsp fresh parsley, finely chopped Salt and pepper, to taste For the Cranberry
Almond Sauce: 1 cup fresh cranberries 1/2 cup water 1/4 cup almond flour 2 tbsp honey 1/2 tsp cinnamon Salt and pepper, to taste To Serve: Fresh parsley sprigs Lemon wedges
Instructions
a. In a large bowl, combine chicken pieces with lemon zest, lemon juice, garlic, olive oil, chopped parsley, salt, and pepper. Marinate for at least 30 minutes in the refrigerator. b. Preheat oven to 400°F (205°C). Thread marinated chicken onto skewers and place on a lined baking sheet. Bake for 18 20 minutes or until cooked through. c. While the chicken is baking, prepare the cranberry almond sauce by combining all ingredients in a small saucepan. Bring to a simmer and cook for 5 7 minutes, stirring occasionally, until thickened. d. Serve skewers with cranberry almond sauce, garnished with fresh parsley sprigs and lemon wedges.
