Instructions

  1. In a large pot over medium high heat, melt the butter and add the mussels. Cook for 3 minutes until they open. Remove from heat and set aside. Discard any unopened mussels.
  2. In a pan, sauté the wild mushrooms in the mussel juice left in the pot for about 4 minutes or until tender. Season with salt and pepper to taste.
  3. In another pan, whisk together eggs, cream, parsley, and dill. Cook over medium low heat, stirring constantly until soft and fluffy (about 5 7 minutes). Remove from heat.
  4. To assemble the dish, place a slice of toasted artisan bread on each plate. Top with smoked salmon slices, followed by avocado and cherry tomatoes.
  5. Spoon the mussels and mushrooms over the assembled ingredients. Pour the soft scrambled eggs over the top.
  6. Garnish with crumbled feta cheese and fresh basil leaves. Serve immediately.
